Ingredients:
Dough:
2 ¼ cups of
flour
½ cup olive
oil
½ cup warm
water
Salt to
taste
For
filling:
¼ cup olive
oil
2 medium
onions chopped
1lb spinach
3 garlic
cloves
6oz black
olives
½ tsp
rosemary
2 eggs
2 tbsp
fresh cream
Directions:
Filling
Saute the
onions in ¼ cup of olive oil till softed then add the spinachs, smashed garlic
and rosemary, let it cook till all the liquid is evaporated. In a small bowl beat
the eggs and the fresh cream and add to the spinach and reserve.
Season with
salt and pepper
For the
dough:
In a large
bowl mix the flour, a dash of salt, ½ cup of olive oil and warm water. Work
with fingers than kneed the dough till it gets well blended, make a ball and
put in a plastic bag and refrigerate for 1 hour. Put the dough between two
sheets of wax paper and role till you a get 10 inches circle. Place the dough
on a pie pan and add the filling in the center and pleat dough around. Add the black
olives cutted in 4 slices, in the center.
Baked at
300ºF pre heated oven for about 30 minutes or until it gets golden brown.
Obs.: because
we are using olive oil you don’t need to grease the pie pan also you can use
whole wheat flour.
