Quick Milk Tart



Ingredients
Pastry
1 cup all-purpose flour
1 tsp baking powder
pinch of salt
scant 1/2 cup superfine sugar
3/4 stick butter
1 large egg beaten

Filling
Generous 3 cups milk
3/4 stick butter
1/4 cup all-purpose flour
Pinch of salt
4 lage eggs, separated
Scant 12 cup superfine sugar
1 tsp vanilla extract
ground cinnamon for sprinkling

Directions
For Pastry:
Sift flour, baking powder and salt. Add sugar. Rub in butter. Add beaten egg, mix well, and press dough into 10 inch round pie plate.
For Filling:
Heat milk in a heavy-based saucepan and add butter.
Sift flour and salt,  add egg yolks and sugar, and beat well.
Add some boiled milk to the egg  mixture, stir, and pour back into saucepan. Boil for a few minutes until thick, stirring constantly, and remove from heat. Add vanilla extract.
Beat egg whites until soft peaks form and fold lightly into the cooked mixture Pour filling into pie plate and sprinkle cinnamon over the top.
Bake in a preheated oven ate 350 F for about 20 minutes.
